Delicious & Easy Weeknight Dinners!

It is officially fall! Many find fall a hectic time of the year which is why it is essential to find quick, delicious & nutritious recipes that you can feed the family! Below are some of my weekly dinner staples that I put on rotation. ENJOY!

TIP: I usually pair all my meals with some combination of oven roasted carrots, asparagus, sweet potatoes and/or brussel sprouts. I prefer vegetables instead of rice or noodles.
TO COOK: Drizzle some oil on the veggies, top with some garlic & pepper seasoning and cook on 420 degrees for 18-20 minutes.

Foil Philly Cheesesteaks

If you love philly cheesesteaks, then this is the recipe for you! By taking away the bun, you can save nearly 200 calories and it still tastes delicious.


Pineapple Chicken Quesadillas

Perfect for lunches or dinners, Pineapple Chicken Quesadillas are low in calories, easy to customize and only take 30 minutes to make. PRO-TIP: If you want to make this recipe even easier, you can use shredded rotisserie chicken instead!


Taco Stuffed Zucchini Boats

Add meat or just your favorite toppings to sliced zucchini boats! This is a great low-carb recipe and perfect for sneaking more veggies in your diet!


Creamy Herb Chicken

One word: DELICIOUS. This is a weekly staple of mine that is restaurant worthy. The best part about this dish are the ingredients are mainly seasonings which keep the costs low & can be used many times!


Italian Bruschetta Chicken

This dish has so much flavor that it is nearly impossible to believe that it is low carb/calorie. Pair with some brussels sprouts for a 10/10 meal!


Lemon Pepper Chicken

Sometimes it’s all about the seasoning! If you’re a big lemon fan, then you will not be disappointed in this dish!


Asian Chicken Lettuce Wraps

If you’ve ever had PF Changs Lettuce Wraps before and loved them, then you need to try this recipe! This is an amazing low-calorie meal and delicious!


Cauliflower Chicken Fried Rice

Who needs all the carbs in regular rice when you can use cauliflower rice! This meal is great for meal prep lunches, dinner and left-overs!


SLOW-COOKER MEALS

Mongolian Beef

This is one of my absolute favorite dishes to make! Best paired with some oven roasted veggies such as asparagus, carrots and broccoli or with a small portion of white rice. Be sure to use low-sodium soy sauce when making the sauce!


Tuscan Garlic Chicken

YUM! This is an easy keto-friendly & low carb dinner that tastes great! This dish is great when paired with noodles, zoodles, cauliflower rice, or brown rice.


DELICIOUS SALADS

Apple Walnut Salad

Apples, walnuts, red onions, feta and more! Great for lunches or dinners and you can top it off with your favorite protein!


Honey Mustard Cobb Chicken Salad

Homemade honey mustard dressing is the way to go! Topped with red onion, hard boiled eggs, cherry tomatoes, avocado & more!


Salmon BLT Salad

“A salad so flavorful and satisfying you’ll forget it all started with lettuce. The combination of salmon, bacon, and avocado is unbelievable and the homemade creamy dressing completes the whole dish!”


Southwestern Pasta Salad

Pasta salads are always a yummy but this one is top notch because of the use of zesty greek yogurt instead of the typical mayonaise.
